For those of you that like a bit of a sweet treat for Valentine’s Day, here’s a delicious recipe for you. They make the perfect delight. This recipe has a cream cheese frosting, but if you prefer regular vanilla icing just opt out the cream cheese.
Ingredients
Cupcakes
- 1 1/2 tsp baking powder
- 1 1/2 cups all-purpose flour, sifted
- ½ tsp salt
- 1 cup granulated sugar
- 2 eggs, at room temperature
- ½ cup unsalted butter, room temperature
- ¾ cup milk
- 2 tsp vanilla extract
Cream Cheese Frosting
- ½ cup unsalted butter, at room temperature
- 8 oz Cream cheese
- ¼ cup 35% whipping cream (approx.)
- 1 tsp vanilla extract
- Pinch salt
- 4 cups icing sugar

- Preheat oven to 350°F (180°C). Line your baking pan. Mix together all of your dry ingredients. In separate bowl beat softened butter with the sugar until its light and fluffy. Beat in eggs, one at a time, and then add the vanilla extract.
- Add your dry mixture in 3 parts, then your milk with half a cup each time.
- Pour batter into your cupcake liners, filling it to 2/3.
- Bake for 20 to 25 minutes or test the middle with a toothpick, if its clean its done.
Frosting
- Beat softened butter for 3-5 minutes. If using a mixer place on low, beat in icing sugar, cream cheese, whipping cream, vanilla extract, food colouring(if desired) and salt. Gradually increase speed until light and fluffy.
- If you have a frosting pipe, add frosting and decorate accordingly. You can also add any type of garnish to finish it off.
